As the saying goes: “If you win the morning, you win the day.” A good, nutritional breakfast is a key to winning the start of any day. To me, the first meal should also be light, quick and easy to make. Here is one of my favourite recipes for a healthy, spinach delight smoothie.

Vegan breakfast smoothie: Spinach delight. Bananas.

For 3/4 cups:

  • water 
  • juice of 3 oranges
  • 2 bananas
  • 1 cup of baby spinach
  • 1 Ts raw honey or maple syrup 
  • 1 Ts pea protein powder

Topping:

  • chia seeds

Method

Put all ingredients in a blender, using less water if you would like a thicker drink. However, you can always add more! Blend away until you get a smooth consistency. Pour into a glass and add chia for a nice, tasty crunch. Voila!

This breakfast is rich in fiber, iron, magnesium, potassium, protein, vitamins A, K and C. Spinach is an effective antioxidant proven to fight inflammation, cardiovascular and bone problems. Bananas aid digestion and they are also a natural prebiotic. Adding fresh orange juice helps prevent kidney diseases and lowers cholesterol levels. Chia seeds are high in protein and Omega-3 fatty acids, which makes them a staple in a healthy vegan diet. In fact, their name comes from the ancient Mayan word for strength.
